GTTC: soba noodles with peanut sauce


My lettuce completely bolted a long while ago, but just before they all reached the end (and before my technical problems), I was able to harvest some beautiful leaves and toss them with these soba noodles, cucumbers, and scallions in a peanut sauce.  The peanut sauce was made with chunky peanut butter, a little OJ, rice wine vinegar, sesame oil, soy sauce, and lots of garlic and ginger.  The whole thing is garnished with some fresh chopped mint.

I LOVE noodles - basically any kind of noodle from a southern noodle dumpling, to Singapore rice noodles.  I think wide rice noodles top the list, with soba just behind.  I learned something recently about soba noodles...After they are cooked, they need to be not only drained, but rinsed - and rinsed well.  Rinsed so that all the starch is removed.  This leaves you with a great pile of cold soba with a great al dente texture.  I've made a similar salad before, but rinsing the soba well really improved the dish.

  1. Oh my gosh, this is one of my favorite dishes. I always order something similiar to this at one of the local restaurants here. I think it's Thai and oh so good. Your dishes are so beautiful....wish I could grow veggies here:)

  2. Your noodle dish looks very delicious. Many Chinese noodles need to be rinsed to remove the starch during the cooking process. We call it "koh lang hor" or cold treatment. In Malaysia, there is a peanut sauce we use in noodles which has curry, turmeric and ginger in it. This is similar to the dipping sauce for satay.

  3. I love peanut sauce - in fact I ate some tonight - I made gado gado and its all I can do to stop myself from running into the kitchen now to see if there is any left in the pan...

  4. I have tried soba noodles and they were'nt very good but now I think it was because I didn't rinse them - so I'll follow this rrecipe. It has made me quite hungry, a bit of a problem on 2 counts - one there's virtually no food in the cupboard, two it's bedtime - 11pm. I just know I'm gonna dream of peanut sauce. O well, I guess there are (much) worse dreams ...
