GTTC: chicken noodle soup (with fall/spring? carrots)

Welcome to the first Garden to Table Challenge post of 2012!


It started with a plan to clear out the raised beds to make way for spring vegetables, but what I found were some gorgeous carrots I never got to in the fall. I ended up pulling a good bunch of frost-sweetened atomic reds and chantenay red cores for a basic chicken noodle soup - perfect for a funky spring in Maryland when the weather is 78 degrees one day and 38 degrees the next and everyone's suffering from what's hopefully the last cold/flu of the season.

  4. Having a garden in a shade is quite a challenge to have nice vegetables to grow.
    Regardless - its truly a blessed moment to feel the harvest and display them on the table to dine.
    My garden however may produce some curry leaf and
    pandan leaves - much of it is just garnishing.

  5. Oh fun, I've missed the GTTC! Here in our mountains, seeds are just barely in the ground, nothing will be harvested for quite some time :-( But I'll see what I can come up with, surely there are still some good foods from the freezer that I grew last year. Does that count? Your soup looks fantastic, my kids would devour it. Chicken soup is their favorite!

  6. Nothing to harvest in the North Woods (yet) ... we haven't even had a bulb bloom. Will check back. BTW .. soup looks amazing!

  7. Dear Wendy, that chicken noodle soup is one of my fave improvised meals. Now as you know I rarely have anything to contribute to your GTTC except parsley and unconditional admiration - but now I'm doing the next best thing. Each week I order a couples box of organic fruit and veggies from an organization called Aussie Farmers Direct and I get whatever is in season and cook and eat accordingly. It's secondhand harvesting! cheers, cm

  10. Soup is just the thing for these recent cool days and wonderful to find buried treasure in the garden to make it with!

    I don't have anything in the garden except green onions and herbs, but composed a GTTC post anyway.

  12. I finally got around to posting my pea soup. Unfortunately, nothing is from my garden, but I fell good that none of the Easter ham went to waste.
